Patio Party - Oven Baked BBQ Ribs



This past weekend I hosted a "Patio Party" for 10 adults and 2 babies.  It was so much fun!!  We had an "Older Adult" table and a "Younger Adult" table with babies.  Here was the menu:

Oven Baked BBQ Baby Back Ribs
Grilled Turkey Tenderloins
Grilled Asparagus
Crock Pot Corn on the Cob
Sun-Dried Tomato Pesto Crash Hot Potatoes
Homemade Breads - Olive, Rosemary, and Cheddar
Dessert Stand- Lemon Cake-Balls, Strawberries and assorted chocolates


Oven Baked BBQ Baby Back Ribs

Ingredients:
1 1/2 slabs of Baby Back Ribs cut into three sections
BBQ Spice rub  ( Recipe is here. )
1 bottle Sweet Baby Ray's BBQ Sauce (Or use your favorite)
1 large onion sliced



Directions:
1.  Remove white membrane on the back of the ribs.  Just slide a knife underneath and it should be fairly easy to peel the membrane off.



2.  Cut the ribs into section of 5-6 ribs each.
3.  Apply the dry BBQ Spice Rub liberally to front and back of the rib rack.  Rub the spice into the meat.



4.  Tear a long piece of aluminum foil and line the roasting pan.  
Tear three more section of foil to make the rib packet.  I double the foil for strength.

5.  Slice the onions into half moons


  
6.  Place the onion on top of the foil.  Lay the rib over the "Onion bed".  Drizzle with Sweet Baby Ray's BBQ sauce.






7.  Seal the foil packet tightly.










8.  Place the packet into the roasting pan.





9.  Preheat oven to 300 degrees.
10. Place the roasting pan with covered ribs into the warm oven and bake for 3 1/2 hours.
11. Remove ribs and uncover, be careful to keep the juices contained in the packet.



12.  Lift the rib rack out of the packet and lay over the foil in the roasting pan.
13.  Cover the ribs liberally with the remaining BBQ sauce. Brushing both front and back sides. 




14.Turn oven temperature up to 400 degrees.  
15. Return the ribs to the oven for 30 more minutes uncovered.  This will caramelize the sugars in the BBQ sauce and give you that crunchy exterior.
16  Remove from oven and let rest 5 minutes.

These ribs will melt in your mouth.  There wasn't a morsel left on the serving platter....just a bone!!  The Grilled Turkey Tenderloin and Asparagus to go with the ribs were also consumed as well.

  2. The meal looks wonderful. Would you mind sharing how you did the corn in the crockpot and the sundried tomato pesto crash potatoes?
